Fruits & Vegetables conversions

Produce measurements depend on how it is cut. Mashed and puréed fruit is dense, while shredded and diced vegetables trap air, so a cup of shredded carrot weighs less than half as much as a cup of pumpkin purée.

Quick answer1.85–4.12 cups per pound

A pound of pumpkin purée fills about 1.85 cups, while a pound of shredded carrot fills about 4.12 cups.

Measuring fruits & vegetables accurately

Cut produce to the size the recipe specifies before measuring, and fill the cup loosely. Shredded carrot and chopped onion should not be pressed down. For purées and mashed fruit, spoon into a dry cup and level. Fresh and frozen berries measure about the same by volume, but thaw and drain frozen fruit for baking if the recipe says so.

How to measure each one

  • Mashed banana: Mash first, then spoon into the cup and level the surface.
  • Diced apple: Dice into recipe-size pieces before measuring for the closest estimate.
  • Blueberries: Measure whole berries loosely and level the top without crushing them; frozen berries measure about the same.
  • Chopped onion: One medium onion gives about 1 cup chopped. Finer dice packs more densely, so a minced cup weighs more.
  • Shredded carrot: Grate on the medium holes of a box grater and fill the cup loosely; about two medium carrots make 1 cup.
  • Pumpkin purée: A 15-ounce can holds about 1¾ cups. Spoon purée into a dry measuring cup and level it.

Swapping one for another

When substituting within this group, swap by weight rather than by cup. For example, 1 cup of shredded carrot weighs 110 g; the same weight of diced apple is 0.88 cups. Matching the weight keeps the recipe balanced even though the volumes differ.

Buying and storing

Produce is sold by weight or by count, which is why recipes often give both. One medium onion makes about 1 cup chopped, two medium carrots about 1 cup shredded, and a pint of blueberries about 2 cups. A 15-ounce can of pumpkin holds about 1¾ cups.
