Dairy conversions
Dairy ingredients split into two groups: pourable creams, which weigh about the same as water per cup, and solid or shredded cheeses, where packing makes a big difference. Butter sits in between and is usually measured by the stick.
A pound of heavy cream fills about 1.91 cups, while a pound of shredded cheddar fills about 4.01 cups.
Dairy weight and volume compared
| Ingredient | Grams per cup | Ounces per cup | Cups per pound | Cups per 100 g |
|---|---|---|---|---|
| Butter | 227 g | 8.01 oz | 2 | 0.441 |
| Heavy cream | 238 g | 8.4 oz | 1.91 | 0.42 |
| Sour cream | 230 g | 8.11 oz | 1.97 | 0.435 |
| Cream cheese | 232 g | 8.18 oz | 1.96 | 0.431 |
| Shredded cheddar | 113 g | 3.99 oz | 4.01 | 0.885 |
Measuring dairy accurately
Pour creams into a liquid measuring cup and read at eye level. Spoon thick sour cream and softened cream cheese into dry cups and level them, pressing out air pockets. Shredded cheese should be loose, never packed: 4 ounces of cheese makes about 1 cup shredded. For butter, the wrapper markings are the easiest guide at 8 tablespoons per stick.
How to measure each one
- Butter: For a precise weight, use the package markings or weigh butter after softening.
- Heavy cream: Measure cream cold in a liquid measuring cup; it roughly doubles in volume once whipped, so measure before whipping.
- Sour cream: Spoon sour cream into a dry measuring cup and level it with a knife; it is too thick to read accurately in a liquid cup.
- Cream cheese: Use the package: an 8-ounce block is just under 1 cup. Soften it before pressing into a measuring cup to avoid air pockets.
- Shredded cheddar: Pile shredded cheese loosely into the cup without pressing; a 4-ounce piece of cheese makes about 1 cup shredded.
Swapping one for another
When substituting within this group, swap by weight rather than by cup. For example, 1 cup of shredded cheddar weighs 113 g; the same weight of butter is 0.498 cups. Matching the weight keeps the recipe balanced even though the volumes differ.
Buying and storing
Cream cheese is sold in 8-ounce blocks and butter in 4-ounce sticks, so the package weights are the easiest way to measure both. Buy cheese in blocks and shred it yourself when volume matters: pre-shredded cheese is coated to stop clumping and packs slightly differently.
